Its juice was subjected to a special process of prolonged fermentation and aged in a variety of barrels for 6 years. On the nose, raisin and brown sugar, hints of fig. On the palate hints of vegetal and earthy with notes of raisin and marzipan. Bottled at 40% this is a sipper for sure. It also makes a superbe Rum Old Fashion. Its juice was subjected to a special process of prolonged fermentation and aged in French oak barrels. On the nose, this 9-month old rum gives a slight almond or marzipan note with a hint of plantain and hay. In the mouth, note of oak, dry finish and doesn t linger on the taste buds.
