In the secluded village of Baradères, nestled on the north side of Haiti's southern fork, Faubert Casimir crafts the renowned Clairin—a spirit celebrated alongside the region's famed coffee and cocoa.
Using Hawaii Rouge and Hawaii Blanc, relatives of the O’Tahiti cane, Casimir employs a meticulous process. The cane is pressed, yielding pure juice that undergoes an extended wild fermentation in local chestnut wooden vats. Embracing the Baradères style, he infuses the fermenting wash with local citrus and lemongrass, creating a distinctive profile.
Clairin Casimir captivates with intense and wild aromas, ranging from candied fruit to aromatic herbs and truffles. The nose is fruity and mineral with exotic fruit basket, forest and savory spice notes, followed by ripe fruits, leather, smoke on the the palate. The finish is complex and earthy.
