Clairin Sajous 2021, crafted by third-generation distiller Michel Sajous in the idyllic village of Saint-Michel de, Haiti, presents a sensory journey encapsulated in tradition and craftsmanship.
Distillerie Chelo, established in 2004 on the historic grounds of Michel's family distillery, yields a rich expression of sugarcane diversity, notably the rediscovered Cane Cristalline. Harvested from December to August, the hand-cut cane undergoes natural fermentation, followed by a meticulous small-batch distillation. Bottled at 50-60% ABV without reduction, this Clairin exudes authenticity.
The nose unfolds with fresh coconut husk, chlorophyll, unripe pear, green freshly cut grass.
The palate is a dance of dry sugar cane, white pepper, cream, ripe melon, bananas and lime oil, culminating in a long, generous finish of herbal, green, and fruity notes, making Clairin Sajous 2021 a truly exceptional Haitian spirit.
