The company's relocation to Trinidad due to political instability marked the beginning of its legacy, transitioning to rum production in the 20th century.
Their exquisite rum, distilled continuously since 1947, presents a straw-yellow hue with golden tints, delivering an elegant nose of sugarcane, dried fruit, spices, honey, and a lingering finish of custard, caramel cream, and mild pepper. Darrozes cellars prioritize natural processes, refraining from adding sugar or woodiness to their spirits. The rums undergo an intricate aging journey, starting in Trinidad within old American white oak bourbon barrels. To achieve their distinct character, the aging process concludes in Gascony, where the rums spend time in small 220-liter barrels previously used for aging Sauternes wines. Additionally, they mature in old 550-liter vats, previously employed for aging Fino, Oloroso, and Manzanilla. This dual-phase aging approach imparts a unique and rich flavour profile to the rums, blending the influences of American oak and Gascony wine casks for a truly exceptional spirit.
