After a cool fermentation lasting 10 to 14 days at 18 24 C, the spirit is distilled in small batches to capture its full aroma at 79 83% ABV. It is then reduced to 65% and aged for a minimum of three years in 600-litre Oloroso and Pedro Ximénez sherry casks.
