With full control of the entire process from fermentation, distillation, cask ageing, blending and bottling, a beautifully smooth spirit which is a classic Rum was created with a honey-like delicacy which we associate with the aromas of the Weald hence the name Wealden Rum. A delicate floral character with subtle tropical fruits, giving way to honeycomb and roast cobnuts on the palate. An elegant finish with raisin and oak and a sweet, clean mouthfeel. HB Birch and Sloe Liqueur 50mlHighland Boundary Birch and Sloe Wild Scottish Liqueur has a rich fruity depth provided by a long maturation from the sloes. The birch buds and sloes are sustainably hand-picked from woodlands near the distillery. The birch buds are copper distilled to produce a fresh, smooth spirit and the sloes are added and mature in the spirit for between 3 to 6 months before finishing as a liqueur. The liqueur is lovely straight over ice, can be lengthened with a soda water or lemonade, is glorious when added to champagne or prosecco and is a perfect ingredient for other cocktails. We use spring Larch buds and summer Honeysuckle flowers picked from woodlands near our on-farm distillery. The larch buds are matured in grain spirit for a number of months before we slow copper distil to produce a spirit with smooth, complex and surprising flavours. A light, vanilla and fruity aroma leads through to a surprising smooth, citrus and light-spicy tasting spirit that lingers long on the palate with hints of umami. It works great straight over ice, with soda, tonic water or ginger ale garnished with a slice of lemon and it is a great alternative to gin or vodka in cocktails.
