Cihuatan Cinabrio Rum 12 Years Old 70clFrom the Cihuatan valley in El Salvador come the closely guarded secrets and legends which are now revealed through the aged Indigo rum to those curious spirits with a thirst to explore. Cihuatan Cinabrio is a rum crafted as an homage to Kinich Ahau, Mayan god of the sun. The name "Cinabrio" is inspired by the colour red, which was crafted by the ancient Maya using the mineral Cinabrio (cinnabar). Red is Tlaloc's sacred colour and regarded as a good omen. The rum is aged for 12 years in American Oak ex-bourbon barrels. What do we think: The nose is fruity and nutty. The palate is warm, with notes of plum, dark chocolate, pistachio with hints of vanilla with a smooth, long toasty oak finish. Cihuatan Indigo is a rum crafted as an homage to Tlaloc, Mayan god of rain. The name "Indigo" is inspired by the colour blue, which was crafted by the ancient Maya using the Indigo flower (annil). Blue is Tlaloc's sacred colour and a symbol of El salvador. The rum is aged for 8 years in American Oak ex-bourbon barrels. What do we think: It is a really good rum with hints of vanilla and hazelnut on the nose. The palate is smooth, with notes of vanilla, dark chocolate, hazelnut coming through with hints of Cappuccino and Lemongrass and a smooth finish. According to Mayan lore, fire was the symbol of love and the eagle goddess Chantico was its guardian. Thus, every loving home would keep a "Sahumerio", a sacred vessel for fire. These Sahumerios would burn day and night in honor of love. Cihuatán Sahumerio features a blend of 4 rums handpicked, by master blended Gabriela Ayala, between 12 and 14 years old of light and heavy rums to achieve the desired notes which mimic what the Maya used to burn in their Sahumerios. Chocolate on the nose with florals notes, the palate has a pleasant warmth with intense dried apricot, cacao butter, dried mint followed by a honey aftertaste. Clairin Le Rocher 2022 Single Traditional Pot Still Rum 70clDistillery Le Rocher ("The Rock") is located in the village of Pignon. Owner Romelus Bethel is the brother of a priest and named his distillery after the biblical parable of the wise and the foolish builders: will liken him to a wise man, who built his house on a rock. The rain came down, and the winds blew, and beat on that house; and itdidn't fall for it was founded on the rock. Clairin Le Rocher is produced using syrup made from the cane varietal Cristalline in Saint Michel de l'Attalaye Syrup is brought to the distillery and diluted until the brix level is advantageous for natural fermentation with the natural yeast of the area. During the very long fermentation, dunder from the previous distillation is added to boost the level of flavor intensity.

Clairin Sajous 2021 Rum 70clClairin Sajous 2021 is a premium spirit crafted at Distillerie Chelo by Michel Sajous, a third-generation producer in Saint-Michel-de-l Attalaye, Haiti. This small and well-organized distillery utilizes Canne Cristalline, an ancient burgundy cane variety, for its exceptional aromatic complexity. Harvested between December and August, the cane is hand-cut with machetes, and the juice ferments spontaneously using ambient yeast from the land. Regarded as the grand cru of Clairin, Clairin Sajous exemplifies the unique flavours of Northern Haiti, offering a delightful blend of bright citrus and grassy botanical notes. The brand is also distinguished by its association with the renowned artist Simeon Michel, whose artwork graces the label.

Clairin Sonson 2020 Single Traditional Pot Still Rum 70clClairin Sonson is from Cabaret, a village located in the district of Arcahaie in the north-west of Port-au-Prince. The sugar cane, from the local variety Madame Meuze, is cultivated on 25 hectares mixing both banana and other fruit trees. Once harvested, the sugar cane is pressed and slowly reduced to syrup. Then, fermented spontaneously using natural yeasts. The distillation is carried out by Stephan Kalil Saoud using a pot still heated over an open fire. The clairin thus obtained is bottled without any reduction.
