This is quite a historic rum. It was one of the very first rum distilled at the St Aubin Distillery back in 2003 from the small original pot still made from first press sugar cane juice grown on the estate. The distilled spirit at 75% abv from the pot still was left to age for 15 years in ex-whiskey barrels following which is diluted a little bit and bottled at 45% abv.
A rum to die for was an appealing nose, quite nutty with hints of dried apricots and tobacco. The palate is woody and smoky, even slightly peaty while retaining the sweetness of the fruit and spices. It has a long and persistent finish. This is a Limited Edition single cask/barrel rum.
